Vacuum sealing and freezer
Cooking this way means cooking more often, so food gets portioned, sealed, labeled and frozen. Everything for that job is on this shelf.

Sealing
Vacuum sealer
For freezing meat and fish in portions without freezer burn. Look for a model that takes both bags and rolls so you can cut the size you need.
Chamber vacuum sealer
Seals soups, sauces, broth and juicy cuts of meat without pulling the liquid into the machine.
Sealer bags and rolls
Bought in bulk, because buying them one box at a time is how the machine ends up in a cabinet unused.
Chamber sealer bags, 8x12, 250 pack
Heavy, pre-cut pouches for the chamber sealer. They don’t work in a regular vacuum sealer.
Chamber sealer bags, two sizes, 280 pack
6x10 and 8x12 pouches for the chamber sealer, so small portions get a smaller bag.
Labeling
Freezer labels
Unglamorous, and the reason I no longer throw out mystery containers in March.
Permanent marker
The other half of the same job. Keep it in the drawer with the labels or you will not use either.
What goes in the freezer
Meat and fish in portions, stock from the Sunday roast, and whatever was made double on purpose.
