Peelers
Peelers are not all the same tool. Some are for speed, some for long vegetables, and some do a second job as well. Here are the ones I have picked, each with what it is good for.

Swivel peeler
The classic hand peeler with a blade that follows the curve of whatever you are peeling. It is the one I would hand to anybody who only wants a single peeler.
Vegetable peeler
Another peeler for the drawer, for the days more than one person is helping with the vegetables.
Julienne peeler
Peels, and also cuts vegetables into thin strips, which is handy when I want carrots or zucchini cut fine without pulling out a knife.
Y shaped peeler
A wide, Y shaped peeler with a comfortable grip, good for cucumbers and other long vegetables where you want broad, quick strokes.
Rotating potato peeler
A rotating peeler for potatoes and apples. You turn the handle instead of working a blade around the whole thing by hand.
Where they get used
Mostly before a pot or a pan, on carrots, potatoes, cucumbers and apples. Single ingredient cooking means a lot of peeling, so I like having the right one in the drawer.
