Baking pans

Everything that goes into the oven on a rack. Two trays of vegetables at a time, and the Sunday roast. The sourdough tools have a shelf of their own now.

Sheet and roasting pans

Sheet pans

Buy more than one. The rhythm here is two trays of vegetables at a time, and crowding is what steams them instead of roasting them. Nonstick earns its place on a sheet pan more than it does in a skillet, because roasted sugar is what welds food to metal.

Heavy roasting pan

Thick enough that the pan juices reduce instead of scorching. This is the difference between good roast chicken and great roast chicken.

Stackable nonstick bakeware set

I wanted bakeware without the usual nonstick chemicals. This set covers everything from roasting to muffins, and the pans stack, so they don't take over my cupboard.

Stackable ceramic bakeware set

If you'd rather go ceramic, this is the set I'd look at. It handles higher oven heat, and the whole thing stacks into one short pile.

What comes out of them

Two trays of roasted vegetables, a roast for Sunday, and a loaf with a crust worth waiting for.
